How clean do the cylinder head mating surfaces need to be?

I am replacing the head gasket on a 2002 Civic that I bought for $800. The machine shop rebuilt the head and I tried cleaning something black on the top of the block with blue Scotch-Bright pads and brake cleaner on shop towels.
All it did was shred both.
I tried a carbide scraper, but that immediately started scraping.
I need to try one of the plastic razors I bought from Ace for $1.79.
I want to put this thing together already! :)
