    Title: Gluten-Free Pumpkin Cookies w/Cream Cheese Frosting

    Yield: 48 servings

    1 c Butter; softened
    2/3 c Packed brown sugar
    1/3 c Sugar
    1 lg Egg; room temp
    1 ts Vanilla extract
    1 c Canned pumpkin
    2 c Gluten-free A-P baking
    - flour
    1 1/2 ts Ground cinnamon
    1 ts Baking soda
    1/2 ts Salt
    1/4 ts Baking powder

    1 1/2 c Confectioners' sugar
    1 1/2 ts Vanilla extract
    3 tb Milk

    Set oven @ 350ºF/175ºC.

    In a large bowl, cream butter and sugars until light and
    fluffy, 5-7 minutes. Beat in egg and vanilla. Add
    pumpkin; mix well. Combine the flour, cinnamon, baking
    soda, salt and baking powder; gradually add to creamed
    mixture and mix well.

    Drop by tablespoonfuls 2" apart onto greased baking
    sheets. Bake until edges are lightly browned, 8-10
    minutes. Remove to wire racks to cool completely.

    In a small bowl, whisk confectioners' sugar, vanilla and
    enough milk to achieve desired consistency; drizzle over
    cookies.

    Title: Monterey Spaghetti
    Categories: Psata, Dairy, Cheese, Greens, Vegetables
    Yield: 8 servings

    4 oz Spaghetti; in 2" pieces
    1 lg Egg
    1 c Sour cream
    1/4 c Grated Parmesan cheese
    1/4 ts Garlic powder
    2 c Shredded Monterey Jack
    - cheese
    10 oz Box chopped spinach; thawed,
    - drained
    2 13/16 oz Can French-fried onions;
    - divided

    Cook spaghetti according to package directions.
    Meanwhile, in a large bowl, beat egg. Add sour cream,
    Parmesan cheese and garlic powder.

    Drain spaghetti; add to egg mixture with Monterey Jack
    cheese, spinach and half of the onions. Pour into a
    greased 2-qt. baking dish. Cover and bake at 350° for 30
    minutes or until heated though. Top with remaining
    onions; return to the oven for 5 minutes or until onions
    are golden brown.
