    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Easy Black Bean Chicken Chilli
    Categories: Poultry, Beans, Chilies, Vegetables, Herbs
    Yield: 10 servings

    1 3/4 lb Diced chicken breast
    2 md Red bell peppers; chopped
    1 lg Onion; chopped
    3 tb Olive oil
    4 oz Can chopped green chilies
    4 cl Garlic; minced
    2 tb Chilli spice mix
    2 ts Ground cumin
    1 ts Ground coriander
    30 oz (2 cans) black beans;
    - rinsed & drained
    28 oz Can Italian stewed tomatoes;
    - cut up
    1 c Chicken broth or beer
    1/2 c To 1 cup water

    In a Dutch oven, saute the chicken, red peppers and
    onion in oil until chicken is no longer pink, about 5
    minutes . Add the green chiles, garlic, chili powder,
    cumin and coriander; cook 1 minute longer. Stir in the
    beans, tomatoes, broth and 1/2 cup water; bring to a
    boil. Reduce heat and simmer, uncovered, for 15 minutes,
    stirring often and adding water as necessary.
