• Caramelized Onion Tart

    Title: Caramelized Onion Tart (Pissaladiere)
    Categories: Pizza, French
    Yield: 1 Pizza

    2 tb Olive oil
    2 lg Vidalia or
    - other sweet onions;
    - thinly sliced
    Salt
    Black pepper; freshly ground
    Enriched Pizza Dough
    1/2 c Nicoise olives;
    - pitted, halved

    Heat 1 tb olive oil in a large skillet over medium-low heat. Add the
    onions, cover, and cook until softened, about 5 minutes. Season to
    taste with salt & pepper, reduce the heat to low, and continue to
    cook, stirring a few times, until the onions are very soft, golden
    brown, and caramelized, 30 to 40 minutes. Remove from the heat and
    allow to cool.

    Preheat the oven to 400?F. Punch the dough down. On a lightly
    floured work surface, roll out or stretch the dough into a rectangle
    about 1/4" thick. Lightly oil a baking sheet and place the dough on
    it, stretching it to fit.

    Drizzle the dough with the remaining 1 tb olive oil. Bake on the
    bottom oven rack for 8 minutes.

    Remove from the oven. Spread the onions on top and dot with the
    olives. Bake on the bottom oven rack until the crust is golden brown,
    25 to 30 minutes. Let cool slightly, cut into squares, and serve warm
    or at room temperature.
