      Title: Quick Apricot Chicken
 Categories: Poultry, Fruits, Herbs, Vegetables, Rice
      Yield: 4 servings
 
    1/2 c  Apricot preserves
      2 tb Soy sauce
      1 tb Chicken broth
      1 tb Oil
      1 tb Cornstarch
      1 ts Minced garlic
    1/4 ts Ground ginger
      1 lb Boned, skinned chicken; in
           - strips
      1 md Bell pepper; chopped
    1/2 c  Salted cashews
           Hot cooked rice
           Crushed red pepper flakes
 
  In a shallow microwave-safe dish, combine the first
  seven ingredients; stir in chicken. Cover and microwave
  on high for 3 minutes, stirring once.
  
  Add green pepper and cashews. Cover and microwave on
  high for 2-4 minutes or until chicken is no longer pink,
  stirring once. Let stand for 3 minutes. Serve with rice
  and, if desired, sprinkle with red pepper flakes.
