National Corned Beef Hash Day

      Title: Corned Beef Hash And Eggs

     32 oz Bag frozen cubed hash
           - browns
  1 1/2 c  Chopped onion
    1/2 c  Oil
      5 c  Chopped, cooked, corned
           - beef
    1/2 ts Salt
      8 lg Eggs
           Salt & pepper
      2 tb Minced fresh parsley
 
  In a large ovenproof skillet, cook hash browns and onion
  in oil until tender and potatoes are browned. Remove
  from the heat; stir in corned beef and salt.
  
  Make 8 wells in the hash browns. Break 1 egg into each
  well. Sprinkle with salt and pepper. Cover and bake @
  325+|F/165+|C until eggs reach desired doneness, 20-25
  minutes. Garnish with parsley.
