      Title: Cajun Pecan Catfish
 Categories: Seafood, Herbs, Nuts, Citrus, Cheese
      Yield: 4 servings
 
      2 tb Olive oil
      2 ts Lemon juice
      1 ts Cajun seasoning
    1/2 ts Dried thyme
    1/3 c  Fine chopped pecans
      2 tb Grated Parmesan cheese
      1 tb Dry bread crumbs
      1 tb Dried parsley flakes
      4    (6 oz ea) catfish fillets
 
  Set oven @ 425┬║F/218┬║C.
  
  In a small bowl, combine oil, lemon juice, Cajun
  seasoning and thyme. In another bowl, combine pecans,
  cheese, bread crumbs, parsley and 1 tablespoon of the
  oil mixture.
  
  Place catfish in a greased 15" X 10" X 1" baking pan.
  Brush with remaining oil mixture. Spread pecan mixture
  over fillets. Bake until fish flakes easily with a fork,
  10-15 minutes.
