Title: Fiesta Tuna Salad Sandwiches

Yield: 12 servings

30 oz (6 cans) white water-packed
- tuna; drained, flaked
1 lg Red onion; chopped
2 md Tomatoes; chopped
2/3 c Mayonnaise
2 Jalapenos; seeded, fine
- chopped
1/4 c Lemon juice
2 cl Garlic; minced
1 ts Seafood seasoning
1 ts Coarse ground pepper
2 Loaves (14 oz ea) ciabatta
- bread; split
3/4 lb Sliced pepper Jack cheese
12 Lettuce leaves

In a large bowl, combine the first nine ingredients;
spread over bread bottoms. Layer with cheese and
lettuce. Replace bread tops. Cut each loaf into six
slices.
