      Title: Buffalo Fried Shrimp
 Categories: Seafood, Chilies, Vegetables
      Yield: 4 Servings
 
    2/3 c  Mayonnaise
    1/2 c  Frank's hot sauce
      2 ts Whole grain spicy mustard
      1 ts (heaping) dill pickle
      1 ts (heaping) shallots; minced
      1 tb Fresh parsley; chopped
           Peanut oil; to fry
      1 c  Flour
      1 c  Lager beer
      2 lb Large shrimp; peeled,
           - deveined, tails on
      2    Ribs celery; bias sliced
           - thin
 
  Mix the mayo, 1/4 cup of the hot sauce, mustard, pickle,
  shallots, and parsley in a small bowl, cover &
  refrigerate.
  
  Set the oven @ 250-|F/120-|C.
  
  Heat 2" of oil in a large wide pot over medium high heat
  until thermometer reads 360-|F/182-|C.
  
  Whisk flour, beer, and remaining hot sauce in a large
  bowl, and toss to coat. Working in batches, remove
  shrimp from batter with slotted spoon.
  
  Fry until golden brown, 2-3 minutes, making sure oil
  returns to 360-|F/182-|C between batches, shrimp will be
  golden brown.
  
  Add celery slices to remaing batter, fry 2-3 minutes.
  Serve with fried shrimp and sauce.
