      Title: Black Bean, Chorizo & Sweet Potato Chilli

      1 lb Uncooked chorizo or spicy
           - pork sausage
      1 lg Onion; chopped
      2    Poblano peppers; fine
           - chopped
      2    Jalapeno peppers; seeded,
           - fine chopped
      3 tb Tomato paste
      3 lg Sweet potatoes; peeled, in
           - 1/2" dice
     58 oz (4 cans) fire-roasted diced
           - tomatoes; undrained
     30 oz (2 cans) black beans; rinsed
           - drained
      2 c  Beef stock
      2 tb Chilli spice mix
      1 tb Dried oregano
      1 tb Ground coriander
      1 tb Ground cumin
      1 tb Smoked paprika
    1/4 c  Lime juice
           Chopped jalapenos; opt
           Chopped red onion; opt
           Crumbled queso fresco; opt
 
  In a large skillet, cook and stir the chorizo, onion,
  poblanos and jalapenos over medium heat for 8-10 minutes
  or until chorizo is cooked. Using a slotted spoon,
  transfer to a 6-qt. slow cooker.
  
  Stir in tomato paste. Add the potatoes, tomatoes, beans,
  stock and spices; stir to combine. Cover and cook on low
  for 6-7 hours or until potatoes are tender. Stir in lime
  juice. If desired, top with chopped jalapenos, chopped
  red onion and crumbled queso fresco.
