MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Trisha Yearwood's Blueberry Pancakes

      Yield: 6 Servings
 
  1 3/4 c  A-P flour
      2 tb Sugar
      1 ts Baking powder
    1/2 ts Vanilla extract
  1 1/2 c  Fresh or frozen blueberries
    1/2 ts Baking soda
    1/2 ts Salt
      2 lg Eggs
      1 c  Milk; more as needed
      1 c  Dairy sour cream
    1/2 c  Butter; melted
    1/2 ts Lemon zest
 
  Sift and mix flour, sugar, baking powder, baking soda,
  and salt in a bowl.
  
  In a separate bowl, whisk eggs. Stir in milk, sour
  cream, half of the melted butter, and vanilla. Whisk
  until completely incorporated.
  
  Make a well in the dry ingredients. Pour the egg mixture
  into it and whisk until combined. If the batter is too
  thick, add 1-2 tablespoons of milk at a time until you
  reach your desired consistency.
  
  Fold in blueberries and lemon zest.
  
  Place a skillet or griddle over medium heat and add the
  remaining melted butter. Pour 1/4 cup of batter into the
  skillet to make one pancake. You can cook 3 to 4
  pancakes at a time, depending on how big your skillet
  is.
  
  When bubbles start to form and pop at the surface (about
  1 minute), flip the pancakes over. Let the other side
  cook for 30 seconds.
