      Title: Pork Meatballs w/Ginger & Fish Sauce
 Categories: Pork, Herbs, Vegetables, Breads
      Yield: 4 servings
 
      2 tb Peeled, minced ginger
      1 tb Minced garlic
      1 tb Fish sauce
      1 ts Fresh ground black pepper
    1/2 ts Kosher salt
    1/2 c  Fine crushed Ritz crackers
      1 lb Ground pork
 
  Set oven @ 425-|F/218-|C.
  
  In a large bowl, combine all the ingredients and use
  your hands to gently mix.
  
  Shape the meat into 12 golf-ball-size rounds (about 2
  inches in diameter) and arrange on a greased rimmed
  baking sheet.
  
  Bake until golden and cooked through, about 15 minutes.
  Serve warm.
  
  TIP: Leftover meatballs freeze well and can be reheated
  in the oven @ 375-|F/190-|C until warmed through (about
  20 minutes).
