      Title: Lemon Ricotta Fritters
 Categories: Breads, Citrus, Cheese
      Yield: 24 servings
 
      1 c  A-P flour
      2 ts Baking powder
  1 1/2 ts Grated lemon zest
        pn Salt
      3 lg Eggs; room temp
      1 c  Whole-milk ricotta cheese
      3 tb Sugar
    1/2 ts Lemon extract
           Oil for deep-fat frying
           Confectioners' sugar
           Honey or strawberry jam
 
  In a large bowl, whisk flour, baking powder, lemon zest
  and salt. In another bowl, whisk eggs, cheese, sugar and
  extract. Add to dry ingredients, stirring just until
  moistened.
  
  In a deep cast-iron skillet or deep-fat fryer, heat oil
  to 375ºF/190ºC. Drop batter by tablespoonfuls, several
  at a time, into hot oil. Fry 2-3 minutes or until golden
  brown. Drain on paper towels. Dust with confectioners'
  sugar. Serve warm with honey or jam.
