      Title: Cheese-Stuffed Shells

      1 lb Bulk Italian sausage
      1 lg Onion; chopped
     10 oz Box chopped spinach; thawed,
           - squeezed dry
      8 oz Cream cheese; diced
      1 lg Egg, lightly beaten
      2 c  Shredded mozzarella cheese;
           - divided
      2 c  Shredded Cheddar cheese
      1 c  Cottage cheese
      1 c  Grated Parmesan cheese
    1/4 ts (ea) salt & pepper
    1/8 ts Ground cinnamon; opt
     24    Jumbo pasta shells; cooked,
           - drained
MMMMM---------------------------SAUCE--------------------------------
     29 oz Can tomato sauce
      1 tb Dried minced onion
  1 1/2 ts Dried basil
  1 1/2 ts Dried parsley flakes
      2 cl Garlic; minced
      1 ts Sugar
      1 ts Dried oregano
    1/2 ts Salt
    1/4 ts Pepper
 
  In a large skillet, cook sausage and onion over medium
  heat until meat is no longer pink; drain. Transfer to a
  large bowl. Stir in the spinach, cream cheese and egg.
  Add 1 cup mozzarella cheese, cheddar cheese, cottage
  cheese, Parmesan cheese, salt, pepper and, if desired,
  cinnamon.
  
  Stuff pasta shells with sausage mixture. Arrange in 2
  shallow 2 qt. or 11" X 7" baking dishes coated with
  cooking spray. Combine the sauce ingredients; spoon over
  shells.
  
  Cover and bake @ 350ºF/175ºC for 45 minutes. Uncover;
  sprinkle with remaining mozzarella. Bake until bubbly
  and cheese is melted, 5-10 minutes longer. Let stand for
  5 minutes before serving.
