      Title: Sweet Potato Cornbread
 Categories: Breads, Potatoes, Dairy
      Yield: 16 servings
 
      2 c  A-P flour
      2 c  Cornmeal
    1/2 c  Sugar
      7 ts Baking powder
      2 ts Salt
      4 lg Eggs; room temp, lightly
           - beaten
    3/4 c  Whole milk
    1/3 c  Oil
  2 2/3 c  Mashed, cooked, sweet
           - potatoes
 
  In a large bowl, combine the first 5 ingredients. In
  a small bowl, combine the eggs, milk, oil and sweet
  potatoes. Stir into dry ingredients just until
  moistened. Pour into a greased 13x9-in. baking pan.
  
  Bake @ 425ºF/218ºC for 30-35 minutes or until a
  toothpick inserted in the center comes out clean. Cut
  into squares. Serve warm.
