      Title: Muffin-Tin Scrambled Eggs
 Categories: Eggs, Mushrooms, Chilies, Pork, Vegetables
      Yield: 24 servings
 
     24 lg Eggs
      1 ts Salt
    1/2 ts Pepper
    1/4 ts Garlic powder
      4 oz Jar sliced mushrooms; fine
           - chopped
      4 oz Can chopped green chilies
      3 oz Sliced deli ham; finely
           - diced
    1/2 md Onion; fine chopped
    1/2 c  Shredded Cheddar cheese
           Pico de gallo; opt
 
  Set oven @ 350ºF/175ºC.
  
  In a large bowl, whisk eggs, salt, pepper and garlic
  powder until blended. Stir in mushrooms, chiles, ham,
  onion and cheese. Spoon about 1/4 cup mixture into each
  of 24 greased muffin cups.
  
  Bake until eggs are set, 18-20 minutes, rotating pans
  halfway through baking. Let stand 10 minutes before
  removing from pans. If desired, serve with pico de
  gallo.
