      Title: St. Vincent Sweet Potato Chips
 Categories: Five, Potatoes, Snacks
      Yield: 4 Servings
 
      1 lb Sweet potato
           Oil
           Salt
 
  Wash and peel potatoes.
  
  Slice thinly.
  
  Soak in cold salted water for 1 hour.
  
  Drain and dry on paper towels.
  
  Fry until browned in deep oil @375oF/190oC.
  
  Drain on paper towels.
  
  Salt and keep warm, till ready to serve.
