      Title: Roasted Herb & Lemon Cauliflower

      Yield: 4 servings
 
      1 md Head cauliflower; in
           - florets
      4 tb Olive oil; divided
    1/4 c  Minced fresh parsley
      1 tb Minced fresh rosemary
      1 tb Minced fresh thyme
      1 ts Grated lemon zest
      2 tb Lemon juice
    1/2 ts Salt
    1/4 ts Crushed red pepper flakes
 
  Set oven @ 425oF/218oC.
  
  Place cauliflower in an ungreased 15x10x1-in. baking
  pan. Drizzle with 2 tablespoons oil and toss to coat.
  Roast 20-25 minutes or until golden brown and tender,
  stirring occasionally.
  
  In a small bowl, combine remaining ingredients; stir in
  remaining oil. Transfer cauliflower to a large bowl;
  drizzle with herb mixture and toss to combine.
