      Title: Sweet Potato Black Bean Chilli

      Yield: 8 servings
 
      1 tb Olive oil
      3 lg Sweet potatoes; peeled, in
           - 1/2" dice
      1 lg Onion; chopped
      2 tb Chilli spice mix
      3 cl Garlic; minced
      1 ts Ground cumin
    1/4 ts Cayenne pepper
     30 oz (2 cans) black beans; rinsed
           - drained
     28 oz Can diced tomatoes;
           - undrained
    1/4 c  Brewed coffee
      2 tb Honey
    1/2 ts Salt
    1/4 ts Pepper

           Shredded Monterey Jack
           Cheese
           Shredded Mexican cheese
           Blend
           Pickled red onions
           Thin sliced green onions
 
  In a nonstick Dutch oven, heat oil over medium heat. Add
  sweet potatoes and chopped onion. Cook and stir until
  crisp-tender, 8-10 minutes. Add chili powder, garlic,
  cumin and cayenne; cook and stir 1 minute longer. Stir
  in beans, tomatoes, coffee, honey, salt and pepper.
  
  Bring to a boil. Reduce heat; cover and simmer until
  sweet potatoes are tender, 30-35 minutes. Serve with
  toppings as desired.
