      Title: Bacon-Wrapped Scallops
 Categories: Pork, Seafood, Herbs
      Yield: 4 servings
 
      8 sl Bacon
     16    Sea scallops; side muscles
           - removed
    1/4 ts (ea) salt & pepper
      2 ts Olive oil
           Chopped fresh parsley
           Seafood cocktail sauce; opt
 
  Place bacon in a large nonstick skillet. Cook over medium heat, until
  partially cooked but not crisp. Remove to paper towels to drain. Cut
  bacon strips lengthwise in half.
  
  Wrap a halved bacon strip around each scallop; secure with a
  toothpick. Sprinkle with salt and pepper.
  
  Wipe skillet clean, if necessary. Add oil; heat over medium-high
  heat. In batches, add scallops; cook 3-4 minutes on each side or
  until scallops are firm and opaque. Discard toothpicks. Sprinkle with
  parsley; if desired, top with additional salt and pepper. Serve with
  seafood cocktail sauce.
