      Title: Catfish Parmesan
 Categories: Seafood, Cheese, Herbs, Breads
      Yield: 6 servings
 
    3/4 c  Dry bread crumbs
      3 tb Grated Parmesan cheese
      2 tb Chopped fresh parsley
    1/2 ts Salt
    1/4 ts Paprika
    1/8 ts (ea) pepper, dried oregano &
           - basil
      6    Catfish fillets (5 oz ea)
    1/2 c  Butter; melted
           Tartar sauce & lemon wedges;
           - opt
 
  In a shallow bowl, combine the bread crumbs, Parmesan
  cheese, parsley and seasonings. Dip catfish in butter,
  then in crumb mixture. Arrange in a greased 13x9-in.
  baking dish.
  
  Bake, uncovered, @ 375ºF/190ºC until fish just begins to
  flake easily with a fork, 20-25 minutes. If desired,
  serve with tartar sauce and lemon wedges.
