      Title: Carolina Shrimp & Cheddar Grits

      Yield: 6 servings
 
      1 c  Uncooked stone-ground grits
      1 lg Garlic clove; minced
    1/2 ts Salt
    1/4 ts Pepper
      4 c  Water
      2 c  Shredded Cheddar cheese
    1/4 c  Butter; in cubes
      1 lb Peeled, deveined, cooked
           - (U-40) shrimp
      2 md Tomatoes; seeded, fine
           - chopped
      4    Green onions; fine chopped
      2 tb Chopped fresh parsley
      4 ts Lemon juice
      3 ts Cajun seasoning; to taste
 
  Place first 5 ingredients in a 3-qt. slow cooker; stir
  to combine. Cook, covered, on high until water is
  absorbed and grits are tender, 2-1/2-3 hours, stirring
  every 45 minutes.
  
  Stir in cheese and butter until melted. Stir in
  remaining ingredients; cook, covered, on high until
  heated through, 15-30 minutes.
