      Title: Baked Chorizo Corn Dip
 Categories: Pork, Vegetables, Chilies, Cheese
      Yield: 9999 servings
 
      1 lb Fresh chorizo
 30 1/2 oz (2 cans) whole kernel corn;
           - drained
    1/2 c  Fine chopped red bell
           - pepper
      1 c  Fine chopped, stemmed,
           - seeded jalapeno peppers
      6    Green onions; chopped
      1 c  Mayonnaise
    1/2 c  Grated Parmesan cheese
  1 1/2 ts Chilli spice mix
      1 cl Garlic; minced
      3 c  Shredded Monterey Jack
           - cheese
           Tortilla chips
 
  Set oven @ 350ºF/175ºC.
  
  In a large skillet, cook chorizo over medium heat until
  cooked through, 6-8 minutes, breaking into crumbles;
  drain.
  
  In a large bowl, combine cooked chorizo and the next 9
  ingredients. Transfer to an ungreased 10-in. cast-iron
  skillet or 9x13-in. baking dish.
  
  Bake until heated through, 30-35 minutes. Serve warm
  with tortilla chips.
