      Title: Gluten-Free Biscuits

      Yield: 9 servings
 
  2 1/4 c  Gluten-free A-P baking
           - flour; w/o xanthan gum
  2 1/2 ts Baking powder
      2 ts Sugar
    1/2 ts Baking soda
    1/2 ts Salt
    1/2 c  Cold butter; in cubes
      1 c  Buttermilk
 
  Set oven @ 425ºF/218ºC.
  
  In a large bowl, whisk the first 5 ingredients. Cut in
  butter until mixture resembles coarse crumbs. Add
  buttermilk; stir just until moistened. Turn onto a
  lightly floured surface; knead gently 8-10 times.
  
  Pat or roll dough to 3/4" thickness; cut with a floured
  2 1/2" biscuit cutter. Place 2 in. apart on a greased
  baking sheet. Bake 10-12 minutes or until golden brown.
  Serve warm.
