      Title: Cajun Corn Soup
 Categories: Vegetables, Pork, Chilies
      Yield: 14 Servings
 
      1 c  Chopped onion
      1 c  Chopped bell pepper
      6    Green onions, sliced
    1/2 c  Oil
    1/2 c  A-P flour
      3 c  Water
     32 oz (2 bags) frozen corn
  1 1/2 lb Smoked sausage; in 1/4"
           - coins
      3 c  Diced, fully cooked ham
 14 1/2 oz Stewed tomatoes
      2 c  Chopped peeled tomatoes
      6 oz Can tomato paste
    1/4 ts Cayenne pepper; to taste
           Salt
           Hot pepper sauce
 
  In a Dutch oven, saute the onion, green pepper and green
  onions in oil for 5-6 minutes or until tender. Stir in
  flour and cook until bubbly. Gradually add water; bring
  to a boil. Add the corn, sausage, ham, tomatoes, tomato
  paste, cayenne, salt and pepper sauce.
  
  Reduce heat; simmer, uncovered, for 1 hour, stirring
  occasionally.
