      Title: Roasted Sweet Potato Salad
 Categories: Potatoes, Nuts, Fruits, Herbs, Sauces
      Yield: 6 servings
 
      4 c  Diced, peeled sweet
           - potatoes
      1 tb Olive oil
    1/2 c  Chopped walnuts; toasted
    1/3 c  Dried cherries; chopped
    1/4 c  Minced fresh parsley
      2 tb Mayonnaise
  4 1/2 ts White vinegar
      1 tb Honey
    1/2 ts Grated lime zest
    1/4 ts Salt
 
  Place potatoes on a 15" X 10" X 1" baking pan coated
  with cooking spray. Drizzle with oil; toss to coat. Bake
  @ 400┬║F/205┬║C for 30-45 minutes or until tender. Cool to
  room temperature.
  
  In a large bowl, combine the walnuts, cherries, parsley
  and potatoes. In a small bowl, combine the mayonnaise,
  vinegar, honey, lime zest and salt. Pour over potato
  mixture and toss to coat. Serve warm or cold.
