      Title: Ham & Potato Casserole

      Yield: 8 servings
 
      4 lb Potatoes; peeled, in 3/4"
           - dice
    1/4 c  Butter
      1 sm Onion; chopped
    1/4 c  A-P flour
      2 c  Milk
      2 c  Shredded Cheddar cheese
      1 ts Salt
    1/2 ts Pepper
      2 c  Diced, fully cooked ham
 
  Set oven @ 350ºF/175ºC.
  
  Place potatoes in a large saucepan; add water to cover.
  Bring to a boil. Reduce heat; simmer, covered, 8-10
  minutes or until crisp-tender.
  
  Meanwhile, in a large skillet, heat butter over
  medium-high heat. Add onion; cook and stir 4-6 minutes
  or until tender. Stir in flour until blended; gradually
  whisk in milk. Bring to a boil, stirring constantly;
  cook and stir 1-2 minutes or until thickened. Stir in
  cheese, salt and pepper until cheese is melted. Stir in
  ham.
  
  Drain potatoes; transfer to a greased 13" X 9" baking
  dish. Top with sauce. Cover and bake until potatoes are
  almost tender, 25-30 minutes. Uncover and bake until
  potatoes are tender, 15-20 minutes longer. Let stand 5
  minutes before serving.
