      Title: Mediterranean Chicken

      Yield: 4 servings
 
      4    (6 oz ea) boned, skinned
           - chicken breast halves
    1/4 ts (ea) salt & pepper
      3 tb Olive oil
      1 pt Grape tomatoes
     16    Pitted Greek or ripe olives;
           - sliced
      3 tb Capers; drained
 
  Sprinkle chicken with salt and pepper. In a large
  ovenproof skillet, cook chicken in oil over medium heat
  until golden brown, 2-3 minutes on each side. Add the
  tomatoes, olives and capers.
  
  Bake, uncovered @ 475ºF/246ºC 10-14 minutes.
