      Title: Slow-Cooker Fajitas
 Categories: Beef, Vegetables, Chilies, Herbs, Cheese
      Yield: 8 servings
 
      3 md Bell peppers; one each green
           - red & yellow; in 1/2"
           - strips
      1 lg Sweet onion; into 1/2"
           - strips
      2 lb Top sirloin; in thin strips
    3/4 c  Water
      2 tb Red wine vinegar
      1 tb Lime juice
      1 ts Ground cumin
      1 ts Chilli spice mix
    1/2 ts (ea) salt, garlic powder,
           - black pepper & cayenne
           - pepper
      8    Flour tortillas (8");
           - warmed
    1/2 c  Salsa
    1/2 c  Shredded Cheddar cheese
      8 ts Fresh cilantro leaves
 
  Place peppers and onion in a 5 qt. slow cooker. Top with
  beef. Combine water, vinegar, lime juice and seasonings;
  pour over meat. Cover and cook on low until meat is
  tender, 8-10 hours.
  
  Using a slotted spoon, place about 3/4 cup meat mixture
  down the center of each tortilla. Top with salsa, cheese
  and cilantro; roll up.
