      Title: Mussels In A Thai Broth

      Yield: 4 servings
 
      1 tb Oil
      1 tb Thai Green Paste
      1 kg Live cleaned mussels
    400 g  Can Coconut Milk
           Coriander; garnish
      1    Green chile; sliced,
           - garnish
 
  In a large pot add you oil and then your paste and cook
  this make sure you are stirring at all time as not to
  burn, you will know when it is ready as the smell with
  fill your kitchen and take you straight to Bangkok
  
  Now check over your mussels any opened ones tap o n the
  bench if they do not close throw them away trim of any
  beards and barnicles
  
  Add the to your pot coating in the thai paste
  
  Pour in the coconut milk add a little water if needed
  some milk can be quite thick on a medium heat cover and
  shake let the mussels steam in the sauce
  
  After 6-10 mins the majority if not all the mussels
  should now be open, and that are closed remove.
  
  Garnish with freshly chopped chilli and coriander take
  to the table with a big crusty loaf and enjoy
