MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Cranberry Nut Bread

      Yield: 8 Servings
 
      2 c  Flour
  1 1/2 ts Baking powder
    1/2 ts (ea) baking soda & salt
      1 c  Chopped cranberries
    3/4 c  Coarse chopped walnuts
    3/4 c  Orange juice
    3/4 c  Granulated sugar
    1/4 c  Butter; melted
      1 lg Egg; beaten
      1 tb Orange zest
 
  Set oven @ 350-|F/175-|C.
  
  COMBINE DRY INGREDIENTS: Whisk together flour, baking
  powder, baking soda, and salt in a large bowl. Stir in
  the chopped cranberries and walnuts to coat with the
  flour mixture. (Coating with flour will help suspend
  the nuts and cranberries in the dough and keep them
  from sinking.)
  
  COMBINE WET INGREDIENTS: In a separate bowl combine the
  orange juice, sugar, melted butter, egg and orange zest.
  
  ADD WET INGREDIENTS INTO DRY: Pour orange juice-sugar
  mixture into the flour nut cranberry mixture and fold
  until just blended. (Don't over-mix!)
  
  BAKE: Transfer dough into a well buttered 8" x 4" or
  9" x 5" loaf pan. Bake for 50 to 55 minutes or until
  done (a tester inserted into the center comes out
  clean).
  
  COOL: Cool in pan for 10 minutes. Remove from pan and
  cool on a wire rack.
  
  UDD Note: On a whim I put walnut halves on the top of
  the loaf before putting it into the oven. Worked nicely
  in addition to the chopped walnuts called out in the
  ingredients listing. I used black walnuts in the batter
  and English walnuts on top. Pecans would work, as well.
