      Title: Treasure Chest Chicken

      Yield: 4 servings
 
    1/4 c  Dried apricots; in strips
      2 tb Dried oregano
      2 tb Capers; drained
      1 tb Chopped garlic
      1 tb Chopped fresh parsley
    1/4 c  Light brown sugar
      1 ts Salt
    1/2 ts Black pepper
    1/4 c  Olive oil
    1/4 c  Red wine vinegar
  3 1/2 lb Chicken; in 8 pieces
 
  In a large resealable plastic bag, combine all
  ingredients except chicken; mix well.
  
  Add chicken to bag, seal, and marinate in the
  refrigerator at least 4 hours or overnight, turning bag
  over occasionally.
  
  Set oven @ 350ºF/175ºC. 
  
  Place chicken in a 9" X 13" baking dish.
  
  Bake uncovered 55 to 60 minutes or until no pink
  remains, basting occasionally with pan juices. Serve
  topped with pan juices.
