MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Luby's Carrot Cake
 Categories: Desserts, Cakes, Fruits, Nuts
      Yield: 9 Servings
 
      3 lg Eggs
  1 1/2 c  Granulated sugar
  1 1/3 c  Crushed pineapple; drained
  1 1/3 c  Carrots; shredded
      1 c  Oil
    1/2 c  Pecan pieces
  1 1/2 ts Baking powder
      1 ts Baking soda
      1 ts Ground cinnamon
      1 ts Vanilla extract
  2 1/2 c  All-purpose flour
MMMMM---------------------------ICING--------------------------------
      1 c  Butter; softened
      1 lb Powdered sugar
      4 oz Cream cheese; softened
    1/2 ts Vanilla extract
           Pecans
           Carrots; fine chopped
 
  Preheated the oven to 350ºF/175ºC. Lightly grease two 9"
  round cake pans.
  
  TO MAKE THE CAKE: In a large bowl, beat together the
  eggs and granulated sugar until blended. Add the
  pineapple, carrots, oil, the 1/2 cup of pecan pieces,
  the baking powder, baking soda, cinnamon, and the 1 ts
  of vanilla extract. Beat until well blended. Add the
  flour. Mix until well blended. Pour the batter into the
  prepared cake pans.
  
  In a preheated oven, bake the cake for 30 minutes or
  until a toothpick inserted into the middle of each layer
  comes out clean. Cool on wire cooling racks.
  
  TO MAKE THE ICING: In a medium bowl, beat together the
  butter/margarine and powdered sugar until creamy. Add
  the cream cheese and vanilla extract. Beat the mixture
  until smooth and creamy. Fill between the layers and ice
  the outside of the cake.
  
  Garnish with the pecans and carrots.
  
  Makes one 9" layer cake.
  
  TIPS: Allow the cake to cool completely before icing.
  
  Place the bottom layer of the cake upside-down side up
  on the plate and the top layer right-side up, for the
  best shape.
  
  Lightly brush the cake to remove any loose crumbs.
  
  Spread a thin layer of the icing on sides of the cake to
  "set" any remaining crumbs before icing the entire cake.
