MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Gumdrop Cookies

3/4 c Shortening
1 c Sugar; divided
1/2 ts Almond extract
1 3/4 c A-P flour
1/2 ts Baking soda
1/4 ts Salt
1 c Chopped fruit-flavored or
- spiced gumdrops
2 lg Egg whites; room temp

Set oven @ 350-|F/175-|C.

Cream shortening and 3/4 cup sugar until light and
fluffy, 5-7 minutes. Beat in almond extract. In another
bowl, whisk flour, baking soda and salt; gradually add
to creamed mixture and mix well. Stir in gumdrops.

In a separate bowl, beat egg whites until soft peaks
form. Gradually add remaining sugar, beating until stiff
peaks form. Fold into dough.

Drop by level tablespoonfuls 2" apart onto ungreased
baking sheets. Bake until golden brown, 12-15 minutes.
Cool 1 minute before removing from pans to wire racks to
cool completely.
