      Title: Chile Prawn Pizza

      1 kg (35 oz) uncooked medium king
           - prawns; shelled, deveined;
           - halved lengthways
      1 sm Red chile; seeded, chopped
           - fine
      4 cl Garlic; crushed
      1 tb Olive oil
      2 tb Tomato paste
    200 g  (7 oz) cherry tomatoes;
           - halved
      4 lg Fresh basil leaves
      1 c  Coarse torn fresh basil
           - leaves
MMMMM------------------------PIZZA DOUGH-----------------------------
      2 ts (7 g) dry yeast
      1 ts Caster sugar
      1 tb Olive oil
    3/4 c  (180 mL) lukewarm water
      2 c  (300 g) A-P flour
 
  Set oven @ 240┬║C/475┬║F (220┬║C/425┬║F fan-forced). Place
  two oven trays in oven to heat.
  
  MAKE PIZZA BASES. Combine yeast, sugar and water in a
  small bowl; cover. Stand in a warm place about 10
  minutes, or until frothy. Sift the flour and salt into a
  large bowl. Stir in the yeast mixture and olive oil; mix
  to a soft dough. Bring the dough together with your
  hands. Add a little extra water, if necessary, to make
  sure all ingredients are incorporated.
  
  Knead dough on a lightly floured surface for 10 minutes,
  or until smooth and elastic. Push the dough with the
  heel of your hand, and give it a quarter turn each time.
  Place the dough in a lightly oiled large bowl; cover.
  Stand in a warm place about 1 hour, or until doubled in
  size.
  
  "Punch" the dough down with your fist, then knead on a
  lightly floured surface until smooth. Halve the dough
  and roll out two round bases.
  
  Combine prawns, chile, garlic and oil in bowl.
  
  Blend or process paste, tomato and whole basil leaves
  until chopped finely.
  
  Place two pizza bases on heated trays; spread each with
  a quarter of the tomato mixture. Bake 6 minutes or until
  beginning to crisp. Top each with a quarter of the prawn
  mixture; bake about 6 minutes or until bases are crisp
  and prawns are cooked; sprinkle each with a quarter of
  the torn basil. Repeat with remaining pizza bases.
