March 16 - National Artichoke Hearts Day
MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Cod Loin au Zang
 Categories: Seafood, Vegetables, Sauces, Herbs, Rice
      Yield: 2 Servings
 
           Brown rice
           Broccoli
      2 tb Olive oil
    1/2 c  Chopped sweet onion
     14 oz Can Artichoke hearts
      2 tb Sundried tomatoes
      1 tb Capers
      1 c  Prepared marinara sauce
      1 lb Boneless cod loin (captain)
           Salt & pepper
      2 tb Italian seasoning
 
  Cook brown rice.
  
  Prepare broccoli.
  
  In a large skillet, over medium heat, saute onion in
  olive oil.
  
  Add artichoke hearts, sundried tomatoes and capers to
  heat.
  
  Stir in marinara sauce.
  
  Sprinkle cod with salt, pepper and Italian seasoning on
  both sides and add to center of skillet.
  
  Heat over medium heat until fish flakes easily. Serve
  over rice with a side of steamed broccoli.
