      Title: Pepper Steaks w/Mushroom Sauce & Creamy Mash

      2 tb Green peppercorns in brine;
           - drained, rinsed, crushed
      2 ts Cracked black peppercorns
      6    (150 g/5 oz) beef scotch
           - fillet or eye fillet steak
      2 ts Olive oil
     40 g  (1 1/2 oz) butter
    400 g  (14 oz) swiss brown
           - mushrooms; sliced thin
    1/2 c  (125 mL) brandy
  1 1/2    (375ml) beef stock
    300 ml (2/3 pt) cream
      2 tb Fine chopped fresh flat-leaf
           - parsley
MMMMM------------------------CREAMY MASH-----------------------------
      1 kg (2.2 lb) sebago potatoes;
           - coarse chopped
    1/2    (125 ml) hot milk
     50 g  (2 tb) butter; coarse
           - chopped
 
  To make creamy mash, boil, steam or microwave potatoes
  until tender; drain. Mash in a large bowl with milk and
  butter. Cover to keep warm.
  
  Combine the peppercorns in a small bowl; press all over
  the beef. In a large frying pan, heat oil; cook steak
  2-3 minutes on each side, or until cooked to taste.
  Cover with foil and rest.
  
  In the same pan, melt butter. Cook mushrooms, stirring,
  until tender. Add brandy and bring to boil. Cook,
  stirring, until liquid has reduced slightly. Stir in
  stock and cream. Continue stirring until sauce thickens
  slightly, then stir in parsley.
  
  Spoon sauce over beef and serve with creamy mash.
