      Title: Rigatoni Bolognese

      Yield: 4 servings
 
      1    Brown onion; chopped coarse
      1    Carrot; chopped coarse
      1    Trimmed celery rib; chopped
           - coarse
      1 tb Olive oil
     50 g  (2 tb) butter
      2 cl Garlic; crushed
    300 g  (10 oz) italian sausage
    500 g  (18 oz) veal and pork mince
      2 tb Tomato paste
    1/2 c  (125 mL) dry white wine
    1/4 c  (60ml) beef stock
    425 g  (14 1/2 oz) can crushed
           - tomatoes
      2 tb Fine chopped fresh basil
      2 tb Fine chopped fresh flat-leaf
           - parsley
    500 g  Rigatoni
    1/4 c  (20 g) coarse grated
           - Parmesan
 
  Blend or process onion, carrot and celery until chopped
  finely.
  
  Heat oil and butter in large saucepan; cook onion
  mixture and garlic, stirring occasionally, 5 minutes.
  
  Add sausage and mince to pan; cook, stirring, until meat
  is browned lightly.
  
  Add paste to pan with wine, stirring to combine; bring
  to a boil. Reduce heat; simmer, uncovered, 2 minutes.
  Add stock and undrained tomatoes; return to a boil.
  Reduce heat; simmer, uncovered, about 20 minutes or
  until bolognese thickens. Stir in herbs.
  
  Meanwhile, cook pasta in large saucepan of boiling
  water, uncovered, until just tender; drain.
  
  Divide pasta among serving bowls, top with bolognese;
  sprinkle with parmesan.
