      Title: Strawberry Cloud Cake

      Yield: 8 servings
 
  1 1/2 c  Strawberry applesauce
  1 1/2 c  Unsweetened applesauce
      2 tb Gelatin powder
 
  Set up a double boiler on the stovetop on low heat. Pour
  all the applesauce into the top bowl and sprinkle the
  gelatin powder on top. Whisk to combine. Continue to
  whisk the mixture occasionally as it becomes warm and
  slightly chunky.
  
  Transfer the mixture to the bowl of a stand mixer fitted
  with the whisk attachment, or use a hand mixer with the
  same bowl. Whip the mixture on high speed for 8-10
  minutes until it becomes pale and creamy. Very soft
  peaks will form.
  
  Pour the whipped mixture into a 7-by-11-inch glass pan.
  Smooth the top with a spatula and place the cloud cake
  in the fridge to set for at least two hours. Once set,
  enjoy the cake on its own or slice and top with whipped
  cream and strawberries.
  
  The ideal topping for this cloud cake is whipped cream,
  but you could certainly choose another topping. Consider
  drizzling it with a fresh strawberry sauce, or even
  pairing it with a dollop of lemon curd.
