      Title: Rosemary Potatoes w/Caramelized Onions

      Yield: 6 servings
 
      2 lb Small red potatoes;
           - quartered
      2 cl Garlic: minced
      1 tb Olive oil
      2 ts Minced fresh rosemary
           +=OR=+
    1/2 ts Dried rosemary; crushed
    1/2 ts Minced fresh thyme
           +=OR=+
    1/8 ts Dried thyme
    1/4 ts (ea) salt & pepper
MMMMM---------------------CARAMELIZED ONIONS--------------------------
      2 lg Sweet onions; chopped
      2 tb Olive oil
      1 tb Sugar
      2 ts Balsamic vinegar
 
  In a large bowl, combine the first 7 ingredients; toss
  to coat. Transfer to a greased 15" X 10" X 1" baking
  pan.
  
  Bake @ 425+|F/218+|C for 45-50 minutes or until potatoes
  are tender, stirring once.
  
  Meanwhile, in a large skillet, saute onions in oil until
  softened. Stir in sugar. Reduce heat to medium-low; cook
  for 30-40 minutes or until deep golden brown, stirring
  occasionally. Stir in vinegar.
  
  Transfer roasted potatoes to a large bowl; stir in
  caramelized onions.
