What I'd like to do is to attach a screen to the Pi (which is attached
to the cabinet), and use that instead. My question is how to do that.
The Pi has neither mouse nor keyboard attached to it, so I need a means
of telling the Pi (ideally at boot time) to display the camera stream on that display. How do I do that ? I did consider a simple CCTV setup,
but would that preclude remote viewing ?
Also, any recommendations for a suitable display to use. Ideally
something no bigger than A5 as space is a tight.

If you want to run the Pios Linux in 'kiosk' mode that can be done.
Auto login and set the program you want to run in the user startup menu
