      Title: Just Peachy Pork Tenderloin
 Categories: Pork, Fruits, Citrus
      Yield: 4 servings
 
      1 lb Pork tenderloin; in 12
           - slices
    1/2 ts Salt
    1/4 ts Pepper
      2 ts Olive oil
      4 md Peaches; peeled, pitted,
           - sliced
      1 tb Lemon juice
    1/4 c  Peach preserves
 
  Flatten each tenderloin slice to 1/4' thickness.
  Sprinkle with salt and pepper. In a large nonstick
  skillet over medium heat, cook pork in oil until tender.
  Remove and keep warm.
  
  Add peaches and lemon juice, stirring to loosen browned
  bits from pan. Cook and stir until peaches are tender,
  3-4 minutes. Stir in the pork and preserves; heat
  through.

      Title: Balsamic-Seasoned Steak
 Categories: Five, Beef, Cheese
      Yield: 4 servings
 
      1 lb Beef top sirloin steak; 3/4"
           - thick
    1/4 ts Coarse ground pepper
      2 tb Balsamic vinegar
      2 ts Steak sauce
      2 oz Sliced Ementhal cheese; in
           - thin strips
 
  Heat broiler. Place steak on a broiler pan; sprinkle
  with pepper. Broil 4" from heat 7 minutes. Meanwhile,
  mix vinegar and steak sauce.
  
  Turn steak; drizzle with 1 tablespoon vinegar mixture.
  Broil just until meat reaches desired doneness, 4-6
  minutes.
  
  Remove steak to a cutting board; let stand 5 minutes.
  Cut steak into 1/4" slices; return to broiler pan,
  arranging slices close together. Drizzle slices with
  remaining vinegar mixture; top with cheese. Broil just
  until cheese is melted, 30-60 seconds.
