      Title: Creamed Potatoes
 Categories: Potatoes, Dairy, Herbs
      Yield: 6 servings
 
      6 md Potatoes (2 lb); peeled, in
           - 1/2" cubes
      3 tb Butter
    1/4 c  A-P flour
      1 ts Salt
    1/4 ts Pepper
      2 c  Milk
           Paprika and minced fresh
           - parsley
 
  Place potatoes in a large saucepan and cover with water.
  Bring to a boil. Reduce heat; cover and cook for 10-15
  minutes or until tender. Meanwhile, in another saucepan,
  melt butter. Stir in the flour, salt and pepper until
  smooth. Gradually add milk. Bring to a boil; cook and
  stir for 2 minutes or until thickened.
  
  Drain potatoes and place in a large serving bowl. Add
  cream sauce; toss gently to coat. Sprinkle with paprika
  and parsley.
