1 c Brown sugar; firmly packed
1/2 c Granulated sugar
1 c Cooked or canned pumpkin
1/2 c Oil
2 Eggs; unbeaten
2 c Sifted flour
1 ts Soda
1/2 ts Salt
1/2 ts Nutmeg
1/2 ts Cinnamon
1/4 ts Ginger
1 c Raisins
1/2 c Chopped nuts
1/4 c Water
Preheat oven to 350 degrees F and grease a 9x5x3" loaf pan.
Combine sugars, pumpkin, oil and eggs; beat until well blended.
Stir together flour, soda, salt and spices - mix well and add to sugar
mixture.
Stir in raisins, nuts and water. Spoon into loaf pan.
Bake for 65-75 minutes, until done when tested with a tooth pick.
Turn out on a rack to cool.
