1 Green pepper; chopped
1 Onion; diced
2 c Cooked rice *
2 Tomatoes; diced
Basil; to taste
Oregano; to taste
6 Eggs
* Good use for leftover dinner rice.
Saute vegetables in oil until tender. Add cooked rice and mix. Make 6
indentations in rice and crack one egg into each indentation. Cook and
simmer 5-10 minutes until eggs are done.
