MMMMM----- Recipe via Meal-Master (tm) v8.06
Title: Pickled Prunes

Yield: 1 Batch
250 ml White wine vinegar (9 oz)
300 g Caster sugar (10-1/2 oz)
1 Cinnamon stick; broken
6 Juniper berries; crushed
6 Black peppercorns
2 Cloves
500 g Prunes (1 lb 2 oz)
-(good-quality unpitted)
Heat the wine vinegar with the sugar and spices, stirring a little to
help the sugar melt.
Once it has melted, boil until the liquid has reduced by a third and
is quite syrupy.
Put the prunes in a sterilized preserving jar (wash it in boiling
water and then leave in a low oven for 15 minutes) and pour over the
syrup.
Cover and leave to plump up.
