    Title: Hot Dog On A Stick Hot Dog
    Categories: Copycat, Turkey
    Yield: 8 Servings

    2 c Flour
    3/4 c Corn meal
    1/2 c Sugar
    1 3/4 ts Salt
    1 ts Baking soda
    1 3/4 c Fat-free milk
    2 Egg yolks; slightly beaten
    8 Turkey hot dogs (up to 10)
    8 c Vegetable oil (up to 10)
    5 Pairs of chopsticks

    One hot summer day in 1946 Dave Barham was inspired to dip a hot dog
    into his mother's corn bread batter, then deep fry it to a golden
    brown. You could say that's when the first Hot Dog on a Stick was
    born, and Dave soon found a quaint Santa Monica, California, location
    near the beach to offer his new creation with mustard on the side
    along with a tall glass of ice-cold lemonade. The chain uses only
    turkey dogs for this treat, so we'll do the same. Just be sure you
    find the shorter dogs, not "bun-length." In this case size does
    matter. For the stick, simply snag some of the disposable wood
    chopsticks from a local Chinese or Japanese food restaurant next time
    you're there and start dipping.

    Preheat oil in a deep pan or fryer to 375?F.

    Combine the flour, corn meal, sugar, salt, and baking soda in a large
    bowl.

    Add the milk and egg yolks to the dry ingredients and mix with an
    electric mixer on high speed until batter is smooth.

    Dry off the hot dogs with a paper towel. Jab the thin end of a single
    chopstick about halfway into the end of each hot dog.

    When the oil is hot, tip the bowl of batter so that you can
    completely coat each hot dog. Roll the hot dog in the batter until it
    is entirely covered.

    Hold the hot dog up by the stick and let some of the batter drip off.
    Quickly submerge the hot dog in the oil and spin it slowly so that the
    coating cooks evenly. After about 20 seconds you can use a lid to the
    deep fryer or pan to put weight on the stick, keeping the hot dog
    fully immersed in the oil. You can cook a couple dogs at a time this
    way. Cook for 5 to 6 minutes or until coating is dark brown. Turn
    them once or twice as they cook. Drain on paper towels while cooling,
    and repeat with remaining hot dogs.

    Title: Cozy Dog Drive In's Corn Dog Recipe (deep fryer)
    Categories: Breads, Sausages
    Yield: 10 Servings

    1 c Flour
    1 1/2 c Corn meal
    1 ts Baking powder
    2 1/4 c Milk
    1/2 tb Sugar
    ds Salt
    2 tb Louisiana hot sauce (opt)
    10 Hot dogs (or for a real
    - treat/heart-stopper,
    - Polish sausage)
    10 (6" to 8") wood sticks or
    - thin pointed dowels *

    Bud's Corn Dog Recipe

    Combine all ingredients to form a batter. If too thick
    add a little more milk. Insert skewers into the pups. Dip
    in batter and drop them into hot oil. Fry to golden
    brown.

    This was based on a recipe in our family cookbook with
    this append to it: These are like the corn dogs sold at
    county fairs. The "Cozy Dog" drive in is a landmark in
    Springfield, Illinois. They specialize in these, and it
    is sometimes rumored that Uncle Bob (my late uncle,
    Robert Bumgarner) knew the owner and got his recipe.

    I added the hot sauce and re-adjusted some quantities.

    Serve with mustard.

    This is guaranteed to get your grease and cholesterol
    levels right up there!

    1 c Lemon juice (6);
    - fresh squeezed
    7 c Water
    1 c Granulated sugar

    Entrepreneur Dave Barham opened the first Hot Dog on a Stick location
    in Santa Monica, California near famed Muscle Beach. That was in
    1946, and today the chain has blossomed into a total of more than 100
    outlets in shopping malls across America. You've probably seen the
    bright red, white, blue and yellow go-go outfits and those trippy
    fez-style bucket hats on the girls behind the counter.

    In giant clear plastic vats at the front of each store floats ice,
    fresh lemon rinds and what is probably the world's most
    thirst-quenching substance--Muscle Beach Lemonade. It's a simple
    concoction really. Only three ingredients. And with this TSR formula,
    you'll have your own version of the lemonade in the comfort of your
    own home at a fraction of the price.

    Combine the lemon juice with the water and sugar in an 2 qt pitcher.
    Stir or shake vigorously until all the sugar is dissolved.

    Slice 2 of the remaining lemon rind halves into 4ths for a total of 8
    pieces, then add the rinds to the pitcher. Add ice to the top of the
    pitcher and chill.

    Serve the lemonade over ice in 12 oz glass and add a lemon rind slice
    to each glass.

    Ed Waldmire may or may not have been 1st with the battered, deep fried
    hoy dogs. To be fair - sometimes when "it's time to railroad" several
    will start laying track. Automobiles are a good example. Similar projects
    came to be in diverse coubtries - at about the same time.

    But Ed was a local boy and his "creation" has many imitators - especially
    at fairs and expositions where it's the ultimate "fair fare" desigbed to
    be eaten whilst one strolls around the grounds ooooohhhhhing and aaahhhing
    at the exhibits.

    He also invented custom clamps that allowe 6 Cozy Dogs to swim in n
    the hot grease st the same time3 A standard restaurant deep fryer would
    hoold two racks of pups at the same time for an even dozen ready to eat

    Still, even though I am proud of my "homie" for soping up withb the
    concept - it's not my favourite hot dog. That eoulf be ....

    Title: Chilli Dog

    Yield: 18 Servings

    1/2 lb Bacon; in small pieces
    1 lg Onion, chopped
    2 lb Ground beef
    4 cl Chopped garlic
    16 oz Can tomato sauce
    1 c Beef broth
    2 tb Molasses or honey
    2 tb Sweet paprika
    1 tb Ground cumin
    2 tb Chilli spice
    1 ts Cayenne
    Salt
    Hot dogs
    Buns
    Chopped onion; garnish
    Shredded Cheddar or Jack
    - cheese; garnish

    The chilli recipe makes enough chilli for 16-20 hot dogs,
    which may seem like a lot, but you're just getting a
    large spoonful with each dog. So, if you have fewer
    people to cook for, just use the leftover chilli as a
    stand-alone-dish for later.

    If you're feeding more, just double the chilli recipe.
    You'll be happy you made a big batch. A note on the hot
    dogs, get the best quality hot dog you can, I/we tend to
    look for kosher dogs. The hot dogs themselves only need
    to be grilled enough to be heated; they are already
    cooked when you take them out of the package.

    Make the chilli first. Fry the bacon over medium heat
    until it begins to get crispy, then add the onions and
    fry over high heat, stirring often, until they begin to
    brown.

    Add in the ground beef and stir in well. Cook this,
    still over high heat and stirring occasionally, until
    the beef is no longer pink. This will take a few minutes.
    When the beef is about halfway cooked, toss in the garlic
    and mix well.

    Once the beef is well browned, add the tomato sauce,
    molasses and beef broth. Add all the spices except the
    cayenne and stir well. Bring to a simmer and taste. Add
    salt or more cayenne if it needs it. You can of course
    add much more cayenne or chilli powder if you like things
    really zippy, but taste first and then add more if you
    like.

    Let the chilli cook on a gentle simmer for at least 30
    minutes before you start grilling the hot dogs. You can
    cook it several hours if you want to, adding a little
    more beef or chicken broth here and there if the chilli
    gets too dry.

    Grill your hot dogs over medium heat until they get a
    light char/grill marks. Grill the hot dog buns briefly
    if you want - no more than a minute, as they will burn
    fast. You can also paint the buns with vegetable oil or
    butter before grilling if you'd like.

    Dog goes in bun, chilli goes on top, sprinkle on chopped
    onion and shredded cheese, and have at it!

    I personally avoid hotdogs because i heard they are carcinogenic.

    Title: Carrot Dogs
    Categories: Vegetarian
    Yield: 4 Servings

    1/2 c Soy sauce
    1/2 c Water
    2 tb Rice vinegar
    2 ts Liquid smoke
    3 cl Garlic; minced
    1 ts Ground black pepper
    1/2 ts Onion powder
    1/2 ts Smoked paprika
    4 lg Carrots; up to 6 -OR-
    1 Bag baby carrots

    Bring a pot of water to a boil. Boil the carrots for about 10-15
    minutes, depending on thickness.

    Mix together the other ingredients while the carrots are boiling.

    Once the carrots are done, put them in a container and cover them
    with the marinade sauce.

    Refrigerate for at least 24 hours.

    Once the carrots are sufficiently marinated, cook them in a pan, on a
    grill, in the microwave, or wherever you prefer.

    They're also really good chopped up and cooked in chili.
