3 lg Green plantains
4 tb Lemon juice
2 tb Peanut oil; for sauteing
1 lg Tomato; peeled; chopped fine
Salt; to taste
Black pepper;
- freshly milled,
- to taste
Peel and slice the plaintains 1" thick. Dip in lemon juice and saute
them in oil over low heat, stirring constantly. Add tomato and
seasoning and transfer to an oiled casserole dish with a lid. Bake at
275?F for 1-1/2 hours.
