    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Grandma's Applesauce Cake
    Categories: Cakes, Desserts, Fruits, Nuts
    Yield: 16 servings

    3/4 c Raisins
    1 c Hot water
    1/2 c Shortening
    2 c Sugar
    1 lg Egg; room temp
    2 1/2 c A-P flour
    2 ts Baking soda
    1/2 ts Salt
    1/2 ts (ea) ground cinnamon, cloves
    - nutmeg
    1 1/2 c Applesauce
    1/2 c Water
    1/2 c Chopped walnuts
    Confectioners' sugar; opt

    Place raisins and hot water in a small bowl; set aside.

    In a large bowl, cream shortening and sugar until light
    and fluffy, 5-7 minutes. Beat in egg. Combine the flour,
    baking soda, salt and spices; add to creamed mixture
    alternately with applesauce and water. Drain raisins;
    fold into batter with the walnuts.

    Transfer to a greased 13" X 9" baking pan. Bake @
    300ºF/150ºC for 40 minutes or until a toothpick inserted
    in the center comes out clean. Place pan on a wire rack.
    Dust with confectioners' sugar if desired. Serve warm or
    cold.

    Title: French Fry Spam Casserole

    Yield: 6 Servings

    1 ea Bag Frozen french fry
    -potatoes, thawed (20 oz.)
    2 c Shredded cheddar cheese
    2 c Sour cream
    1 cn Condensed cream of chicken
    -soup (10 3/4 oz.)
    1 cn Spam, cubed (12 oz.)
    1/2 c Chopped red bell pepper
    1/2 c Chopped green onion
    1/2 c Finely crushed corn flakes

    Heat oven to 350 degrees F. In a large bowl, combine potatoes,
    cheese, sour cream and soup. Stir in Spam, pepper and green onion.
    Spoon into a 13" x 9" baking dish. Sprinkle with corn flakes. Bake
    30-40 minutes or until thoroughly heat through. Serve 6-8.

    Nutritional Information Per Serving: Calories 786, Protein 26g,
    Carbohydrate 49g, Fat 55g, Cholesterol 122mg, Sodium 1476mg.

    Title: SPAM Pasta Primavera
    Categories: Pork, Pasta, Vegetables, Cheese
    Yield: 8 servings

    1 lg Onion; fine chopped
    1/2 ts Fennel seeds
    1 3/4 c Chicken broth; divided
    12 oz Can SPAM Luncheon Meat, cut
    - into strips
    1 c Fine chopped parsley
    3 Egg whites
    1 Egg
    16 oz Vermicelli
    1 1/2 c Shredded Parmesan cheese;
    - divided

    In non-stick skillet, combine onion, fennel, and 1 cup
    broth. Bring to a boil; boil, stirring occasionally,
    until liquid has evaporated. Add SPAM and remaining 3/4
    cup broth. Bring to a boil. Add parsley. In bowl, beat
    together egg whites and egg. Cook vermicelli according
    to package directions. Drain well. Add hot pasta to SPAM
    mixture. Pour egg mixture over pasta and immediately
    begin lifting with 2 forks to mix well. Add 1 cup
    cheese. Mix until all broth is absorbed. Sprinkle top
    with remaining cheese.
