I made this up for dinner tonight and served it with rice. I also
made some dumplings and put them in the casserole 25 minutes before
the casserole was ready.
Chop the chicken breasts and peel the shallots and marinate in the
red wine vinegar, chicken stock, tomatoes, and bouquet garni for 2
hours in the refrigerator. After 2 hours, remove from the
refrigerator and add the honey and mustard. Bake on Gas Mark 4 for 1
hour then add the dumplings. Bake at Gas Mark 7 for 25 minutes then
serve.
